
My favorite treats to make are easy ones. I like something that can be made quickly, but that presents well. While looking for a sweet treat for St. Patrick’s Day, I decided to make a traditional Rice Krispie Treat. Melted chocolate and a fun, festive sprinkle blend make these a fast and easy snack to celebrate with.
Ingredients
- 6 tablespoons of unsalted butter
- 6 cups of Rice Krispies
- 1 pinch of salt
- 1 teaspoon of vanilla extract
- 15 oz (1 and 1/2 bags) + one handful of mini marshmallows
- 1 bag of chocolate morsels (I used dark chocolate)
- sprinkles

Recipe
One of the things I love most about Rice Krispie Treats is how hard they are to mess up. It is a very simple recipe. To elevate the flavor, I like to add a little bit of vanilla extract and a pinch of salt. Just before I add them to the pan to cool, I toss in a handful of mini marshmallows. I like for them to remain un-melted for a little bit of chewy goodness.
First, melt down your butter in a large saucepan. If you want to experiment, try browning your butter for a nutty rich flavor.
Next, add 15 oz of mini marshmallows to the melted butter (reserve your handful for later.) I like using the mini marshmallows because they melt faster. Stir until they are completely melted and combined with the butter.
Mix in a pinch of kosher salt and 1 teaspoon of your favorite vanilla extract.
Stir in your Rice Krispies and the remaining handful of marshmallows.
Using a buttered spatula, press your Rice Krispies into a lightly buttered 13×9 sheet pan.
To make my Rice Krispies festive for St. Patrick’s Day, I dipped one end into melted semi-sweet chocolate morsels and sprinkled sprinkles over the top! I got this fun sprinkle blend from Michael’s.
